Abstract

This paper approaches the butchers in the book of "Gangs of New York" (Herbert Asbury), "The Butcher" (Isaac Singer) and "The Jungle" (Upton Sinclair). The approach focuses on the labor of butchers in contexts defined in the period 1850 to 1960. The main key concerns the negative image about the handling of meat and blood, dirt and slaughter of animals. The authors show a view that discourages work with meat. For them, butchers live in violent social environments and populated by criminals, or in the condition of workers exploited in slaughterhouses. Specifically, I try to find and problematize this perception. I conclude that the stigma attributed to the butcher (including the workers in slaughterhouses) derives from a repulsive image about his labor whose root is located in social contexts characterized by pauperization, cruelty and violence.
